Beer with a marshmallow chaser — whatever next?

IT’S like a pairing from a movie scene.

In fact, it is a pairing from a movie.

Please sir, I want s’more is Tooborac Hotel and Brewery’s latest creation and it’s sure to turn some heads at the GABS: beer, cider and food festival in Melbourne in May and Sydney in June.

Head brewer Pete Martin (pictured below with his new drink) said the idea hit him out of nowhere.

“It was referenced in a movie and I didn’t really know what s’mores were so I looked them up and thought it’d be a good idea for a beer,” he said.

The festival gives brewers the chance to pitch their insane combinations to the public all while vying for the people’s choice.

Biscuit, chocolate and marshmallow — a traditional American campfire treat — now all in a stout beer thanks to Tooborac Brewery.

And Pete said it took no time at all to perfect the recipe.

“The first batch was the one. I had my wife and mum toast 2kg of marshmallows up for it,” he said.

“Chocolate and biscuits go hand-in-hand with dark beer, but marshmallow is a bit different.

“And while it doesn’t seem much, when you actually see 2kg it’s a fair amount of marshmallow to toast.”

Being an American tradition, Pete admits he isn’t the first to do it.

“As far as I know there’s only one other company in Australia which makes a s’mores beer, but there are quite a few in America,” he said.

But don’t go racing to pull it off the shelves or grab a keg for yourself, the 1000lt of brew won’t be released until after the Sydney festival in June.

“It’ll be running off the same gas as a Guinness to give it a nice smooth pour too,” he said.
